Since I dropped down to 2o hours a week instead of 30 at work I have some more time to try new recipes (that schedule change was much needed...I feel a million times more relaxed and sane). Here's a recipe I tried out yesterday, again from the Cooking Light cookbook my mom got us for Christmas. I liked it a lot more than Jason did, but I thought it was pretty tasty. . . and fun to make (pretty easy, too!). It's meatless, but it does have cheese. I'm kind of out of ideas of things to make again. Most dishes with meat just aren't appetizing anymore to me, but I think we're burnt out on a lot of our vegetarian staples from the last few months. (Any suggestions?)

Lasagna Rolls with Roasted Red Pepper Sauce

I'm a big fan of quiches for our vegetarian option for the week. You can toss a cheese of choice in there with a bunch of veggies (spinach, mushrooms, bell peppers, onions, garlic, etc etc) and you have an easy filling meal. Not sure if you're doing eggs though.
We also eat a lot of pasta, sometimes with simple herb sauces, sometimes with more traditional reds. Ravioli's and tortellinis are great when you toss them with a bunch of sauteed summer veggies, sliced basil and a drizzle of olive oil and a sprinkle of cheese.
I eat meatless pizzas a lot. Pizza dough is easy to make and freezer really well. That is great to load up with tons of veggies and toss in a super hot oven.
We'll do a meatless breakfast for dinner sometimes, pancakes, omelettes, potato pancakes. . .
Haha can you tell our meat trade off is cheese?
Thanks! Those sound delicious. I want to try out the spaghetti squash dish. I've never used spaghetti squash before, but I've thought about it.
I was a Vegetarian for 2 years and have some great vegetarian cookbooks. I will bring them to church, assuming you guys are here this weekend?
Spaghetti squash is one of my all-time favorite things to eat. I have a really easy great recipe for it too I can give you.
